I love trying new international recipes. This is a Scandinavian salad with sausage (I used vegan soy sausage), potatoes, tomatoes, cornichons, and zucchini. This is my first time making it and we liked it very much.
- olive oil
- 1 red onion, finely chopped
- 2 cups spicy sausage (vegan or normal), cut into small pieces
- 1 zucchini, finely chopped
- 1 tomato, seeded, chopped
- 1 tsp thyme
- 1 tsp Dijon mustard
- 2 tsp wheat flour
- 2 tbsp red wine vinegar
- 1 tsp maple syrup
- salt and pepper to taste
- lettuce leaves
- 3 small potatoes, boiled and halved
- cornichons
Heat oil in a skillet. Saute onions for 4 minutes constantly stirring. Add sausage and stir-fry for 4 more minutes. Add zucchini and tomato, mix everything well, and stir fry for a little longer. Add thyme, mustard, flour and cook over low heat for a minute. Then add red wine vinegar and maple syrup. Turn off the heat. Season to taste.
Serve on a bed of lettuce leaves with potatoes and cornichons. Enjoy!
