Burritos
- olive oil for frying
- 1/2 white onion, diced
- 3 garlic cloves, minced
- 1 green bell pepper, diced
- 1 cup frozen corn, thawed
- 1 tsp chili powder (or to taste)
- 1/2 tsp cumin
- hot sauce to taste
- juice of two limes
- 1 15 oz can black beans, with liquid
- 1 1/2 cups rice, cooked
- salt to taste
- 6 tortillas
- 1/2 cup vegan Mozzarella cheese
Green Sauce
- 1 tbsp olive oil
- 1/2 white onion, chopped
- 2 garlic cloves
- 1 green bell pepper, seeded, chopped (Use Anaheim peppers for a hot version of this sauce)
- 1 jalapeno pepper, seeded, chopped
- 1 1/3 cup vegetable broth
- 1 1/3 tbsp flour
- 1/2 cup fresh cilantro, chopped
- salt to taste
Garnish
- salsa
- limes
- shredded vegan Mozzarella
Heat oil in a large skillet. On medium saute onions and garlic for 2 minutes. Add green bell peppers and saute until they are softened. Add corn, chili, cumin and hot sauce. Mix everything well. Saute for 2 more minutes. Pour lime juice over the mixture. Add black beans with liquid and cooked rice. Mix everything well. Season with salt. Heat through. Turn the heat off.
Preheat oven to 350F. Spray a casserole dish with olive oil. Assemble burritos by adding enough rice and bean mixture to fill the tortilla. Roll up from bottom enfolding the filling. Press down gently to help the filling spread evenly. Place burritos seam side down in a deep casserole dish. Cover with a damp cotton cloth (cheese cloth). Cover the dish with tin foil tightly. Bake for 35 minutes. Remove the dish from the oven. Remove the tin foil and cotton cloth. Sprinkle burritos with cheese. Put them back into the oven and bake until the cheese melts.
Meanwhile prepare the green sauce. Heat 1 tbsp oil in a skillet. Saute onions and garlic for 2 minutes. Add green bell pepper and jalapeno. Saute for 2 more minutes. Add vegetable broth. Heat through. Transfer the mixture to a blender. Add flour, cilantro, and salt. Puree the mixture until smooth. Keep warm.
Once the burritos are ready, serve them with the warm green sauce, salsa, and more Mozzarella. Enjoy!
