I often crave something sugary after dinner. Who doesn't? This little dessert provides natural sugar from fruit and honey without making you feel guilty. I stuffed these apples with finely chopped dried apricots, almonds, and candided ginger and baked them in the oven. They are so good. Perfectly juicy and soft!
- 4 large Granny Smith apples
- 1 1/2 tbsp honey
- 1 1/2 tbsp orange juice
- 1/4 cup rolled oats
- 3 tbsp almonds, chopped
- 20 dried apricots, finely chopped
- 1 tbsp candied ginger, finely chopped
1. Core apples, but do not cut all the way through. Cut the apple in half horizontally. Using a spoon scoop out the flesh forming a little well inside of the apple.
2. Preheat oven to 350F. Combine honey and orange juice in a small sauce pan. Heat on low and add rolled oats. Cook for 2 minutes stirring a few times. Add almonds, apricots, and candied ginger. Heat through and remove from the heat.
3. Stuff the apples with apricot mixture. Place them in a baking dish. Pour warm water into the dish to reach about 1/3 of the way up the apples. Bake for 40 minutes or until the apples are soft. Serve warm.
