Peach and Sweet Corn Salsa


We got two boxes of local Utah peaches at the farmers market and now every meal I make consists of peaches. This is a sweet salsa made with peaches, corn and bell peppers. Fruity and mildly spiced.

Makes 3 cups

  • 4 large peaches, finely chopped
  • 1/2 red onion, finely chopped
  • 1 jalapeƱo, seeded and minced (use 2 if you like it a bit spicier!)
  • 1/2 green bell pepper, seeded and diced
  • 1/2 cup sweet yellow or white corn, frozen and thawed
  • 2 garlic cloves, minced
  • 1/2 bunch fresh cilantro, minced
  • 1 tsp apple cider vinegar
  • 1/2 tsp paprika
  • juice of 1 large lime
  • salt to taste


Combine all ingredients in a medium bowl. Chill in the refrigerator for at least 2 hours to allow the flavors to combine. Enjoy!
