Ivory Coast Cucumber/Zucchini Salad


Today I met a lady from South Africa. She lived in Utah for a couple of years and said that the hardest thing for her to get used to here was the food. She said that the foundation of their diet in South Africa is fruit and veggies. Here in the US most people base their diet on meats and breads. Meeting her inspired me to make something with veggies and something African! Here's something not exactly Southern African, but African after all. This is now my new favorite salad.

Ingredients:

  • 2 cucumbers, thinly sliced
  • 2 zucchini, thinly sliced
  • 1 small red onion, chopped
  • 1/2 hot water
  • 1/3 cup vinegar
  • 1/4 cup sugar
  • 1/2 tbsp salt
  • 1 tsp black pepper
  • 1 pinch red pepper flakes

The recipe calls for arranging cucumbers, zucchini, and onion in layers in a bowl. I just mixed everything up. In a separate bowl combine the rest of the ingredients and mix well. Pour over the vegetables and let them marinade in the fridge for 1 hour.
